Mercyful Fate: Melissa, Don't Break the Oath, and the Behold the Beginning albums have lots of killer riffs. Another good one...

With youtube, p2ps, and myspace, all types of metal are really accessible. Find a band you like and see what bands are listed as their influences or are their "friends". Other ways are searching Amazon or Wikipedia which will give you names of many unheard of bands in the same subgenre. There are also the super old school ways, like reading mags, going to the record store and seeing who has the illest graphics. Good luck with it.
d00d...anything KREATOR put out, but more notably the album ENEMY OF GOD. PARKWAY DRIVE & their album HORIZONS....and anything by CONVERGE, but more notably the albums JANE DOE & YOU FAIL ME.....riffs by the ton!
More punk than metal, but both The Warriors and Cancer Bats have some amazing riffs. Genuine Sense of Outrage by The Warriors is a must if you're after great riff laden heavy music. See below for examples of both bands;

Dat "Angel of Death" riff! So good P.E. had 2 use it! Then I liked "Black Metal" by Venom and "Orgasmatron" by Motorhead.
